- 1 pound ground beef
- 1 packet (1 ounce) taco seasoning
- 1 can (8 ounces) Rotel tomatoes (undrained)
- 12 ounces Velveeta cheese (cubed)
- ⅔ cup evaporated milk (or whole milk)
- 1 bag (32 ounces) frozen tater tots
- 1½ cups cheddar cheese or cheddar jack cheese (shredded)
Instructions
- Preheat your oven to 400 degrees F.
- Spread the frozen tater tots onto a baking sheet in a single layer. Bake for 20-25 minutes, flipping them halfway through.
- Alternatively, you can air fry the tater tots at 400 degrees F for 12 minutes to crisp them up.
- Heat a large skillet over medium heat while the tater tots are cooking. Add the ground beef, cook until browned, and break it up with a spatula. Drain excess grease.
- Stir in the taco seasoning and Rotel tomatoes (with juice). Simmer for 2-3 minutes to let the flavors blend.
- Reduce heat to low and add the Velveeta cubes and milk. Stir until the cheese is completely melted and the mixture is smooth.
- Lightly grease a 9×13-inch baking dish.
- Spread the creamy beef mixture evenly into the dish.
- Arrange the crispy tater tots in a single layer over the top.
- Place the assembled casserole back in the 400 degree F oven and bake for 20 minutes, until the mixture is hot and bubbling.
- Remove from the oven and sprinkle the shredded cheese evenly over the top.
- Return to the oven and bake for 5 more minutes, or until the cheese is melted.
- Let the casserole rest for 5 minutes before serving. This allows the cheese to set slightly while keeping everything creamy and delicious.
