Description

  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1 can (8 ounces) Rotel tomatoes (undrained)
  • 12 ounces Velveeta cheese (cubed)
  • ⅔ cup evaporated milk (or whole milk)
  • 1 bag (32 ounces) frozen tater tots
  • 1½ cups cheddar cheese or cheddar jack cheese (shredded)

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Spread the frozen tater tots onto a baking sheet in a single layer. Bake for 20-25 minutes, flipping them halfway through.
  3. Alternatively, you can air fry the tater tots at 400 degrees F for 12 minutes to crisp them up.
  4. Heat a large skillet over medium heat while the tater tots are cooking. Add the ground beef, cook until browned, and break it up with a spatula. Drain excess grease.
  5. Stir in the taco seasoning and Rotel tomatoes (with juice). Simmer for 2-3 minutes to let the flavors blend.
  6. Reduce heat to low and add the Velveeta cubes and milk. Stir until the cheese is completely melted and the mixture is smooth.
  7. Lightly grease a 9×13-inch baking dish.
  8. Spread the creamy beef mixture evenly into the dish.
  9. Arrange the crispy tater tots in a single layer over the top.
  10. Place the assembled casserole back in the 400 degree F oven and bake for 20 minutes, until the mixture is hot and bubbling.
  11. Remove from the oven and sprinkle the shredded cheese evenly over the top.
  12. Return to the oven and bake for 5 more minutes, or until the cheese is melted.
  13. Let the casserole rest for 5 minutes before serving. This allows the cheese to set slightly while keeping everything creamy and delicious.
