A delicious and easy slow cooker beef and broccoli recipe that is perfect for a weeknight dinner.
Ingredients

- 1½ lb flank steak (thinly sliced)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- ½ cup beef stock
- ¼ cup stir-fry sauce
- 1 tablespoon brown sugar
- 1 tablespoon cornstarch
- 2 tablespoons cold water (for slurry)
- 10 oz. broccoli florets
- cooked rice or noodles (optional, for serving)
Instructions
- Add the sliced beef, diced onion, garlic, beef stock, stir-fry sauce, and brown sugar to the slow cooker. Stir gently to combine.
- Cover and cook on low for 5-6 hours, until the beef is tender.
- In a small bowl, mix the cornstarch with 2 tablespoons cold water until smooth.
- Stir the slurry into the slow cooker to thicken the sauce.
- Add the broccoli florets during the final 30 minutes of cooking. Cover and continue cooking until the broccoli is tender but still bright green.
- Taste and adjust seasoning if needed.
- Serve hot over rice or noodles. Sprinkle with sesame seeds if desired.
Notes
- For a spicier version, add red pepper flakes or your favorite hot sauce.
- Feel free to substitute the broccoli with other vegetables like bell peppers or snow peas.
