Description

A delicious creamy garlic mushroom chicken recipe that’s perfect for a comforting dinner.


Ingredients

Scale
  • 4 (6 oz each) boneless skinless chicken breasts
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 8 oz cremini or white mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup chicken broth (low sodium)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup fresh baby spinach (optional)
  • for garnish Fresh parsley, chopped

Instructions

  1. Pat chicken breasts dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove from skillet.
  2. Reduce heat to medium and melt 2 tablespoons butter in the same pan. Add mushrooms and sauté 5–7 minutes until browned.
  3. Add garlic and sauté 1 minute. Pour in chicken broth to deglaze the pan, scraping up browned bits.
  4. Stir in heavy cream, parmesan, Italian seasoning, onion powder, and red pepper flakes. Simmer 3–4 minutes to thicken.
  5. Add spinach if using, and stir until wilted.
  6. Return chicken to the skillet. Spoon sauce and mushrooms over the top. Simmer 3–5 minutes to blend flavors.
  7. Turn off heat, garnish with parsley, and serve hot.

Notes

  • For a lighter version, use half-and-half in place of heavy cream.
  • This dish pairs well with pasta, rice, or a side salad.
