Ingredients
Scale
- 4 (6 oz each) boneless skinless chicken breasts
- to taste salt and pepper
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 8 oz cremini or white mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup chicken broth (low sodium)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 cup fresh baby spinach (optional)
- for garnish Fresh parsley, chopped
Instructions
- Pat chicken breasts dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove from skillet.
- Reduce heat to medium and melt 2 tablespoons butter in the same pan. Add mushrooms and sauté 5–7 minutes until browned.
- Add garlic and sauté 1 minute. Pour in chicken broth to deglaze the pan, scraping up browned bits.
- Stir in heavy cream, parmesan, Italian seasoning, onion powder, and red pepper flakes. Simmer 3–4 minutes to thicken.
- Add spinach if using, and stir until wilted.
- Return chicken to the skillet. Spoon sauce and mushrooms over the top. Simmer 3–5 minutes to blend flavors.
- Turn off heat, garnish with parsley, and serve hot.
Notes
- For a lighter version, use half-and-half in place of heavy cream.
- This dish pairs well with pasta, rice, or a side salad.
