Ingredients

- 1 cup granulated sugar
- 2 tsp baking powder
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tbsp red gel food coloring
- Optional: 1/2 cup chopped nuts (pecans or walnuts)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and a pinch of salt.
- In another bowl, beat sugar and eggs until light and fluffy. Mix in vanilla extract and red food coloring.
- Gradually fold the dry ingredients into the wet mixture until just combined; add nuts if desired.
- Shape dough into two logs (12 inches long, 4 inches wide) on the baking sheet.
- Bake for 25-30 minutes until firm but soft in the center. Cool for 10 minutes before slicing diagonally into 1-inch pieces.
- Arrange slices cut-side down on the baking sheet and bake again for an additional 15-20 minutes until crisp. Let cool completely before serving.
