Ingredients

- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1 tsp ground ginger
- Zest of 1 orange
- 1/2 cup fresh orange juice
- 1/4 cup honey
- 2 large eggs (room temperature)
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
- In a bowl, whisk together flour, sugar, baking powder, ground ginger, and orange zest.
- In another bowl, mix eggs, fresh orange juice, and honey until smooth.
- Combine wet and dry ingredients gently until just mixed.
- Fill muffin tins about two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
- Cool slightly before drizzling with additional honey.
Notes
- For best results, use fresh orange juice and zest.
- These muffins can be stored in an airtight container for up to 3 days.
