- 3 ½ cups all-purpose flour
- 2 ¼ tsp instant yeast
- ½ cup sugar
- 1 tsp salt
- 1 cup whole milk (warm)
- ½ cup unsalted butter (melted)
- 3 large eggs (room temperature)
- 2 tsp pure vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream (for custard)
- ⅓ cup sugar (for custard)
- 4 egg yolks (for custard)
Instructions
- In a large bowl, mix flour, instant yeast, sugar, and salt until combined.
- In another bowl, whisk warm milk, melted butter, eggs, and vanilla extract. Gradually add to dry ingredients while stirring gently.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Let the dough rise in a greased bowl covered with a damp cloth for about one hour or until doubled in size.
- Meanwhile, prepare the custard by heating cream over low heat, whisking in sugar until dissolved. Gradually stir in egg yolks until thickened.
- Once risen, punch down the dough and divide it into small balls. Flatten each ball slightly and fill with chocolate chips and custard before sealing them.
- Place seam-side down in greased muffin tins and bake at 350°F (175°C) for 18-20 minutes until golden brown.
Notes
- Ensure the milk is warm but not hot to avoid cooking the eggs.
- Let the muffins cool a bit before serving for best texture.
