Description

A creamy and delicious mash of parsnips and carrots, perfect as a side dish.


Ingredients

  • 1 lb parsnips, peeled and chopped
  • 1 lb carrots, peeled and chopped
  • 4 tbsp unsalted butter
  • ½ cup heavy cream (or milk)
  • 1 tsp salt
  • ½ tsp freshly cracked pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the chopped parsnips and carrots on the baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  3. Roast in the oven for 25-30 minutes until golden brown and tender.
  4. Transfer roasted vegetables to a large bowl, add butter and heavy cream, then mash until creamy.
  5. Serve warm, garnished with fresh herbs if desired.

  • For a lighter version, substitute milk for heavy cream.
