These delicious butter cookies are perfect for any occasion, easy to make, and customizable with sprinkles!

- 1 cup (226g) unsalted butter, softened
- 1/2 cup (60g) powdered sugar
- 1/4 cup (50g) granulated sugar
- 2 cups (240g) all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: festive sprinkles or colored sugar for decoration
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the softened unsalted butter, powdered sugar, and granulated sugar using an electric mixer on medium speed. Beat until the mixture becomes light and fluffy, about 2-3 minutes.
- Add the vanilla extract to the butter mixture and mix until fully combined.
- In a separate bowl, whisk together the all-purpose flour and salt until well combined. Gradually add this dry mixture to the creamed butter mixture, mixing on low speed until the dough comes together. Be careful not to overmix.
- Once the dough is formed, you can shape it into a disk or roll it into logs if you prefer slice-and-bake cookies. If the dough is too soft, refrigerate it for about 30 minutes to firm up.
- For cut-out cookies, roll out the dough on a floured surface to about 1/4 inch thick. Use cookie cutters to cut out your desired shapes, and place them onto the prepared baking sheet.
- For slice-and-bake cookies, slice the chilled dough logs into 1/4 inch thick rounds and place them on the prepared baking sheet.
- If desired, sprinkle the tops of the cookies with festive sprinkles or colored sugar for added decoration.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Keep a close eye on them to avoid overbaking, as you want the cookies to remain pale.
- Once baked, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Then transfer them to wire racks to cool completely.
