Description

A delicious cheesy dip made with lean ground beef and a blend of cheeses, perfect for parties!


Ingredients

  • 1 lb lean ground beef (90/10 or 93/7)
  • 8 oz full-fat cream cheese, softened
  • 8 slices American cheese or 8 oz Velveeta, cut into chunks
  • 1 cup shredded cheddar cheese
  • 1/2 cup dill pickle relish or finely chopped dill pickles
  • 2 tbsp yellow mustard
  • 2 tbsp ketchup
  • 1/2 cup mayonnaise
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • 1/2 cup diced yellow onion
  • Garnish: shredded iceberg lettuce, diced pickles, sesame seeds

Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, cook the ground beef until fully browned, about 5-7 minutes. Drain excess fat and transfer to the crockpot.
  2. Assemble the Base: Add softened cream cheese, American cheese slices (or Velveeta), and shredded cheddar cheese to the crockpot with the ground beef.
  3. Whip Up the Special Sauce: In a small bowl, combine mayonnaise, dill pickle relish, yellow mustard, ketchup, onion powder, garlic powder, and smoked paprika. Whisk until well combined, then pour over the cheese and beef in the crockpot.
  4. Add the Onions & Stir: Sprinkle in diced yellow onion and stir well to combine all ingredients evenly.
  5. Cook to Perfection: Cover the crockpot and set to LOW heat. Cook for 1 to 2 hours, stirring every 30-45 minutes, until cheeses are melted and dip is bubbly. Alternatively, cook on HIGH for about 1 hour, stirring frequently.
  6. The Final Stir & Serve: Once melted and hot, give a final stir and transfer to a serving area or bowl.
  7. Garnish and Enjoy: Top with shredded lettuce, diced pickles, and sesame seeds. Serve immediately with tortilla chips, crackers, toasted burger bun slices, or french fries.
