  • 2 cups low-sodium vegetable broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté the onion and bell peppers until soft, about 5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in ground turkey, breaking it apart with a spatula. Cook until browned, about 6-8 minutes.
  5. Mix in rinsed quinoa, taco seasoning, and vegetable broth. Bring to a gentle boil before reducing heat.
  6. Cover and simmer on low for about 15 minutes or until quinoa is cooked and liquid is absorbed. Stir occasionally.
