Description

A creamy and nutritious matcha chia pudding topped with fresh ingredients.


Ingredients

Scale
  • ½ cup chia seeds
  • ¾ cup plain Greek yogurt
  • 1 cup milk of choice
  • ⅓ cup shelled pistachios (unsalted)
  • 2 tsp matcha powder (ceremonial grade if you can)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • As desired yogurt, for topping
  • As desired chopped pistachios, for topping
  • As desired honey drizzle, for topping
  • As desired fresh raspberries, for topping

Instructions

  1. In a blender, add milk, pistachios, matcha, maple syrup, vanilla, and a pinch of salt. Blend until completely smooth and vibrant green.
  2. Add Greek yogurt to a medium bowl and pour in the blended matcha pistachio milk. Whisk together until fully combined.
  3. Stir in chia seeds and let sit for 5 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 2–4 hours, or overnight, until thick and scoopable.
  5. Scoop into bowls and finish with toppings.

Notes

  • This pudding can be made in advance and stored in the refrigerator for a quick breakfast or snack.
  • Feel free to adjust the sweetness by adding more or less maple syrup according to your taste.
