Description
A delicious and healthy spinach and cheese bake that is perfect for breakfast or brunch.
Ingredients

- 1 cup cottage cheese (low-fat or full-fat)
- 2 cups fresh baby spinach
- 6 large eggs
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, diced
- ½ tsp salt (to taste)
- ¼ tsp black pepper (to taste)
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a 9-inch baking dish with nonstick cooking spray.
- In a skillet, heat olive oil over medium heat and sauté diced onion until soft and translucent, about 5 minutes.
- Add fresh spinach to the skillet and stir until wilted, approximately 2 minutes. Set aside to cool slightly.
- In a large bowl, whisk together the eggs until smooth; mix in cottage cheese, cheddar cheese, salt, and pepper until fully combined.
- Fold in the sautéed onions and spinach until evenly distributed.
- Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until set in the center and lightly golden on top.
- Allow to cool slightly before slicing; serve warm.
Notes
- This dish can be served warm or at room temperature.
- Feel free to add other vegetables or herbs for additional flavor.
