- 1 lb baby potatoes
- 3 tbsp olive oil
- 2 tbsp honey
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the baby potatoes thoroughly and cut larger ones in half.
- In a bowl, combine olive oil, honey, Dijon mustard, garlic powder, salt, and pepper; whisk until well-blended.
- Toss the halved potatoes in the glaze until evenly coated.
- Spread the potatoes on the baking sheet in a single layer and roast for 30-35 minutes until golden brown and crispy.
- Allow to cool for a minute before serving.
Notes
- For extra crispiness, try broiling the potatoes for the last 2-3 minutes of cooking.
- Adjust the amount of honey and mustard to taste for a sweeter or more tangy flavor.
