A hearty slow cooker turkey chili that’s easy to prepare and perfect for meal prep.
Ingredients

- 2 lbs ground turkey (93% lean)
- 30 oz dark red kidney beans (or one kidney beans and one black beans, drained and rinsed)
- 28 oz diced tomatoes (do not drain)
- 6 oz tomato paste
- 4 oz diced green chiles (mild)
- 1 ½ cups chopped celery (175g) (large, chunky pieces)
- 1 cup diced yellow onion (40g)
- 1 large green bell pepper (125g) (diced)
- 2 tablespoons sugar or sweetener (monk fruit or coconut sugar)
- 1 teaspoon salt
- ½ teaspoon lemon pepper (to taste)
- ½ teaspoon garlic powder
- 1 teaspoon marjoram
- 1 tablespoon dried parsley
Instructions
- In a large skillet on medium high heat, brown the ground turkey. Drain.
- Add the browned ground turkey, drained kidney beans, canned tomatoes, celery, onion, green bell pepper, tomato paste, green chilis, sweetener, salt, dried marjoram, garlic powder, lemon pepper, and dried parsley to the slow cooker.
- Combine all ingredients with a large spoon.
- Start on High for 1-2 hours and then turn down to Low for 6+ hours, stirring occasionally. Enjoy!
Notes
- For a spicier chili, add jalapeños or hot sauce to taste.
- This chili can be served with toppings like cheddar cheese, sour cream, or chopped green onions.
