A hearty and delicious beef stew packed with vegetables.
Ingredients

- 1 lb ground beef
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 potatoes, diced
- 2 stalks celery, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 cup frozen peas
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp tomato paste
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
- Add chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Stir in diced potatoes, diced tomatoes (with juices), beef broth, tomato paste, dried thyme, salt, and black pepper. Mix well.
- Bring the stew to a boil, then reduce heat to low. Cover and simmer for 40 minutes, stirring occasionally, until the vegetables are tender.
- Add frozen peas and simmer for an additional 5 minutes. Taste and adjust seasoning if necessary before serving.
Notes
- Feel free to adjust vegetable quantities based on preference.
- Serve with crusty bread for a complete meal.
