Description

This cheesy beef and potato bake is a comforting dish made with ground beef, potatoes, and cheddar cheese.


Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the potatoes into small cubes.
  3. Chop the onion and mince the garlic.
  4. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic; sauté until fragrant.
  5. Add the ground beef, seasoning with salt, black pepper, thyme, and paprika. Cook until browned and fully cooked, about 8-10 minutes.
  6. Add the beef broth and stir to combine, then remove from heat.
  7. In a large mixing bowl, combine the diced potatoes with the beef mixture. Fold in the sour cream and half of the shredded cheddar cheese.
  8. Spread the mixture into a baking dish evenly.
  9. Top with the remaining cheddar cheese.
  10. Cover with foil and bake in the preheated oven for 30 minutes.
  11. Remove the foil and continue baking for 10-15 minutes, until cheese is melted and bubbly.
  12. Allow to rest for 10 minutes before serving.

Notes

  • For added flavor, you can include some chopped green onions on top before serving.
