Ingredients

  • 1 pound ground turkey
  • 8 ounces pasta (any type)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can (14 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Boil water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until fragrant and translucent.
  3. Increase the heat to medium-high. Add the ground turkey to the skillet. Cook until browned, breaking it up with a spatula.
  4. Add the bell pepper and zucchini to the skillet. Sauté for about 5 minutes or until the vegetables are tender.
  5. Stir in the diced tomatoes (with their juice), tomato paste, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Reduce the heat to low and let the sauce simmer for about 5-10 minutes, allowing the flavors to meld together.
  7. Add the cooked pasta to the skillet, tossing everything together to ensure the pasta is well-coated with the sauce.
