- 1 pound ground turkey
- 8 ounces pasta (any type)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can (14 ounces) diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
- Fresh basil leaves, for garnish (optional)
Instructions
- Boil water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until fragrant and translucent.
- Increase the heat to medium-high. Add the ground turkey to the skillet. Cook until browned, breaking it up with a spatula.
- Add the bell pepper and zucchini to the skillet. Sauté for about 5 minutes or until the vegetables are tender.
- Stir in the diced tomatoes (with their juice), tomato paste, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
- Reduce the heat to low and let the sauce simmer for about 5-10 minutes, allowing the flavors to meld together.
- Add the cooked pasta to the skillet, tossing everything together to ensure the pasta is well-coated with the sauce.
- Remove from heat and serve immediately, garnished with grated Parmesan cheese and fresh basil leaves if desired.
