Deliciously chewy white chocolate macadamia nut cookies that are perfect for any occasion!

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ½ cups white chocolate chips or chunks
- 1 cup chopped macadamia nuts
Instructions
- Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper.
- In a large bowl, or the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- Gently fold in the white chocolate chips/chunks and chopped macadamia nuts using a spatula.
- Scoop the dough using a 1 cookie scoop onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 9–12 minutes, or until the edges are golden brown and the centers are still slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For softer cookies, underbake slightly.
- Store in an airtight container for up to a week.
