Description
Delicious Halloween-themed cupcakes decorated with gummy eyeballs.
Ingredients

- 1 box cake mix (any flavor)
- 24 large gummy eyeballs
- 1 cup butter (room temperature)
- 2 teaspoons vanilla extract
- 5–6 tablespoons milk
- 7–8 cups powdered sugar
Instructions
- Make and bake cupcakes according to the instructions on the back of the box. Allow to cool completely before decorating.
- In the bowl of a stand mixer, beat the room temperature butter until light and fluffy using the whisk attachment.
- Add half of the powdered sugar, the vanilla extract, and half of the milk. Whip on low speed to combine, then increase to high and whip until light and fluffy again.
- Add the rest of the powdered sugar, then add the rest of the milk about a tablespoon at a time until you reach the desired consistency (Note: you may not need it all).
- Divide the frosting into 3 separate bowls. Add a few drops of food coloring to each bowl to make different colors.
- Add the first color of frosting to a piping bag with a large tip and pipe onto 1/3 of the cupcakes. Repeat with the other colors of frosting.
- Top each with a candy eyeball, or any other decorative Halloween treats. Enjoy!
Notes
- Food coloring can be adjusted based on preference for color vibrancy.
- Frosting consistency can be altered by adjusting milk quantity.
