Description
A creamy and delicious vegan version of classic mashed potatoes, perfect as a side dish.
Ingredients

- 3 lbs red potatoes, medium (2-3)
- 1/2 cup vegan butter
- 1 cup unsweetened almond milk
- 2 Tbsp garlic powder
- salt/pepper (to taste)
- fresh basil leaves (optional)
Instructions
- Cut the red potatoes into quarters and place in a large stock pot.
- Add enough water to cover the potatoes and bring to a boil.
- Bring to a simmer and cover for 20 minutes (or until soft).
- Remove from heat and let cool for about 5 minutes.
- Drain any excess water.
- Mash the red potatoes and add in the butter, milk, garlic powder, salt, and pepper.
- Top with fresh basil (optional) and enjoy!
Notes
- Make sure to use unsweetened almond milk for the best flavor.
- Adjust garlic powder and seasoning to your preference.
- This dish can be served with a variety of main courses.
