Description

Ingredients

  • 2 pounds Russet Potatoes
  • 2 pounds Yukon Gold Potatoes
  • 2 pounds Red Bliss or New Potatoes
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup Avocado Oil
  • 1/4 cup Vegetable or Canola Oil
  • 1 tablespoon Kosher salt or sea salt
  • 1 teaspoon Freshly ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 tablespoon Fresh rosemary
  • 1 tablespoon Fresh thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Dried herbs (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and place a large baking sheet in the oven to heat up.
  2. Wash your potatoes under cold running water. Peel them if desired, then cut into roughly 1 to 1 ½-inch pieces.
  3. Transfer the cut potatoes to a large mixing bowl. Drizzle generously with your chosen oil and add salt, black pepper, garlic powder, onion powder, and any dried herbs. Toss until well coated.
  4. Carefully remove the hot baking sheet from the oven and spread the seasoned potatoes in a single layer. Do not overcrowd the pan.
  5. Place the baking sheet back into the preheated oven and roast for 20-25 minutes. Flip the potatoes with a spatula and continue roasting for another 15-25 minutes until golden brown and crispy.
  6. Remove the roasted potatoes from the oven and serve immediately, optionally garnished with fresh chopped parsley or chives.
