Description

A simple and delicious lemon garlic baked cod recipe.


Ingredients

  • 4 fillets cod (about 5 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Lemon slices, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil or cooking spray.
  2. Pat the cod fillets dry with paper towels and arrange them in a single layer in the prepared baking dish.
  3. In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  4. Pour the lemon-garlic mixture evenly over the cod fillets. Top with lemon slices.
  5. Bake for 16-18 minutes, or until the cod is opaque and flakes easily with a fork.
  6. Remove from the oven, sprinkle with fresh parsley, and serve immediately.
