- 3 cups diced apples (Granny Smith, Honeycrisp, or Fuji)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil or melted unsalted butter
- 1 cup milk
- 1 teaspoon vanilla extract
Instructions
- Prep Your Workspace – Preheat your oven to 350°F (175°C) and prepare a 9×13 inch sheet cake pan by spraying it with cooking oil or greasing it with butter and dusting with flour.
- Whisk the Dry Ingredients – In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt. Whisk until no lumps remain.
- Combine the Wet Ingredients – In a separate medium bowl, whisk together the room-temperature eggs, melted oil or butter, milk, and vanilla extract until smooth.
- Marry Wet and Dry – Pour the wet ingredients into the bowl with the dry ingredients and gently mix until just combined, being careful not to overmix.
- Fold in the Apples – Add the diced apples to the batter and gently fold them in until evenly distributed.
- Bake to Perfection – Pour the batter into the prepared pan and smooth the top. Bake for approximately 35-45 minutes, or until golden brown and a toothpick comes out clean.
- Cool and Enjoy! – Let the cake cool in the pan for 15-20 minutes before serving. Optionally, drizzle with a simple glaze or serve as is.
