Key Ingredients for Mexican Lasagna Casserole

Creating a delicious Mexican Lasagna Casserole requires a handful of key ingredients that come together to deliver bold flavors and a comforting texture. Here’s what you’ll need:

  • Lasagna Noodles: Opt for no-boil lasagna noodles if you’re looking for convenience. They absorb the sauces beautifully, creating that perfect layered effect without the extra step of pre-cooking.

  • Ground Beef or Turkey: For a hearty base, ground beef adds richness, while turkey is a leaner alternative. Both options bring savory flavors that meld perfectly with the spicy ingredients.

  • Taco Seasoning: The magic of this dish lies in the seasoning. A good taco seasoning mix infuses the layers with a vibrant kick, making every bite burst with flavor.

  • Black Beans: These not only add protein but also bring a lovely texture and balance to the casserole. Their creaminess complements the sharp flavors.

  • Cheese: A combination of cheddar and Monterey Jack adds that delightful meltiness we all crave. It creates a gooey, flavorful layer that ties everything together.

  • Salsa: Choose your favorite salsa to bring in freshness and moisture. It acts as the flavorful sauce, making your casserole juicy and aromatic.

Cooking Tips and Notes

Creating the perfect Mexican Lasagna Casserole is all about attention to detail and a little creativity in the kitchen. This dish not only satisfies the taste buds but also brings a vibrant twist to your dinner table. Here are some key things to remember as you embark on this culinary adventure:

Choosing the Right Meat

For your Mexican Lasagna Casserole, ground turkey, beef, or chicken all work beautifully. Lean ground turkey is a healthier option, while ground beef offers a rich, hearty flavor. Don’t forget to season your meat well; a sprinkle of taco seasoning or cumin can elevate your dish!

Layer Wisely

When assembling your layers, think about balance. Spread a layer of sauce first to keep the tortillas from becoming soggy. Alternate layers of cheese and beans for that creamy texture, and always finish with a generous layer of cheese on top to achieve that perfect golden-brown crust.

Use Fresh Ingredients

Fresh vegetables can take your casserole to another level. Chopped bell peppers, onions, and even corn add color, texture, and nutrients. If you have leftover roasted vegetables, toss them in for an extra flavor kick.

Slow Cooker or Oven

If you’re short on time, the slow cooker method allows for hands-off cooking while you take care of other tasks. If you prefer a crispy texture, bake it in the oven. Both methods deliver delicious results, so choose based on your schedule!

Let It Rest

After it’s cooked, allow your Mexican Lasagna Casserole to sit for about 10-15 minutes before serving. This helps the layers set, making it easier to slice and serve.

With these tips in mind, you’ll create a memorable dish that will impress family and friends alike!

Pair your meal with a chilled Horchata or a classic margarita. These drinks not only cool you down but also add a layer of authenticity that enhances your Mexican Lasagna Casserole dining experience.

Description

A delicious and hearty Mexican-style casserole made with layers of tortillas, spicy ground beef, and cheese.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 pounds lean ground beef
  • 1 onion, chopped small
  • 1 tablespoon Kalyn’s Taco Seasoning (or use your favorite purchased taco seasoning)
  • 1 cup Pace Picante Sauce
  • 2 cans (10 oz. can) Ro-Tel Tomatoes and Green Chiles
  • 6 low-carb tortillas, cut in half
  • 2 cups cottage cheese
  • 1 can (4 oz.) diced green chiles, drained
  • 2 eggs
  • 3 cups grated Mexican Cheese Blend

Instructions

  1. Heat the oil in a large heavy frying pan, add the ground beef, breaking it apart with your fingers, and cook over medium-high heat until the beef is browned and cooked through. Break beef apart with a turner or old fashioned potato masher as it cooks so it’s in small pieces.
  2. When the beef is done, push it over to the side, add a little more oil if needed, and cook the diced onion for a few minutes; then mix the onion with the beef.
  3. Add Kalyn’s Taco Seasoning, salsa, and Ro-Tel tomatoes and simmer over low heat until most of the liquid has evaporated and when you draw a turner across the bottom of the pan you don’t see any liquid.
  4. While beef mixture cooks, mix together the cottage cheese, drained green chiles, eggs, and 1 cup of the cheese.
  5. Cut the tortillas in half with kitchen shears and spray the slow cooker insert with non-stick spray.
  6. In the crockery casserole dish insert, make a layer of tortillas, using the cut side of the tortillas to go along the straight sides. Use the least amount of tortillas you can to cover the bottom.
  7. Make a layer of half the spicy meat mixture, half the cottage cheese mixture, and one cup of the grated cheese (or more). Then make a second layer each of the tortillas, meat mixture, cottage cheese mixture, and grated cheese.
  8. Cover the slow cooker and cook on HIGH for about 2 1/2 hours or until the casserole is bubbling and the cheese is nicely melted.
  9. If you’re using the Casserole Crock, you can brown the finished dish in a 400F/200C oven for about 15 minutes if desired, but that step is completely optional.
  10. If you want to try this in the oven, a reader reported she baked it for 45 minutes and it turned out perfectly and was a hit with her husband.
  11. I’d use 375F/190C if you’re baking it in a casserole dish and spray the casserole dish with non-stick spray.

Notes

  • Use your favorite taco seasoning if Kalyn’s is unavailable.
  • If you prefer, substitute ground turkey or chicken for the beef.
